One of the tasks on my list of things to do today is cleaning the fridge. As usual, it's crowded with various jars of vegetables I've preserved, fruit jams and sauces, and homemade condiments. As I pawed through the top shelf, I found a few things that looked like they would go together for a tasty lunch as well letting me clear out a couple of containers: 2 tbs pickled jalapeno/carrots/onion, 2 olives, garlic slices from olive jar, 4 oz jar of pickled baby okra, garlic slices from okra jar, and 2 spoonfuls green tomato relish.
I heated up some water for couscous and added all of the vegetables except the relish. After adding the whole wheat couscous, I turned off the heat and let the pan sit, covered, for 5 minutes. The relish was stirred in at the end for a little seasoning.
Result? Easy and tasty lunch, complete with homemade cherry vanilla soda.

We have downsized the fridge. There was an under bench fridge for sale on 'trade me' so we bid for it and got it for $1.50. Now thats what I call a bargain! So now I can't lose things in the fridge because it only takes three small shelves.

Hmmm... my "doomer" lunch would consist of oatmeal with green chili, onions, and basil/sage. Guess I should get going on my gardens again. (I hope to have them done in time to put in a fall pea/lettuce/etc crop, and then they'll be ready for spring!). And the food storage... I can't seem to keep anything but oatmeal in bulk (and that only because we eat so MUCH of it).
Hey Chile, I did this with a cucumber salad the other day not knowing about the challenge. I was having fun more than anything, well, and I'd missed the farmers' market so there wasn't any fresh food in the house. But like you the results were surprisingly tasty. It really did get me thinking about what I have planted.
Yum! I think I could make a Doomer Banquet with all the stuff bursting out of my fridge right now.
I like that meal!

For about two years now all my breakfasts and lunches, if they came from a recipe book, would be written in doomerese. Most suppers, too. Ate out maybe nine times last year. I do occasionally relapse -- badly --certain kinds of salty chips seem to be my Waterloo -- but m'here t'say: the 100 foot diet they talk about over at Little Homestead in the City? s'good eatin!

Jennifer - rice, wheat, and beans all store well. Better than oatmeal, in my opinion. (I had some oatmeal go rancid on me in the damn heat here.)

Maggie's Meadow - you could do that just with your garden produce! Forget the stored food. LOL
Risa - mine's a little further than 100 feet since our garden's not producing much yet. (Planted too late.) I have to go a little over 3 miles to the CSA and that food comes from almost 100 miles away. With time, we hope to be growing more and more of our own.
