You'll notice some of the same foods as last week. That's a result of two things: one is we're getting some of the same produce each week at the CSA. The other reason is I didn't eat up everything from last week (like the butternut squash).
- Spicy mixed greens (must be cooked)
- A few I'itoi onions (like super-spicy green onions)
- Armenian cucumber (from last week - they keep well)
- Radishes
- 1 bell pepper
- Roasted green chiles
- 2 green tomatoes
- 3 pears
- Applesauce (homemade)
- Onions
- A few red potatoes
- Butternut squash
- Cooked brown rice (overcooked really - kind of mushy)
- Leftover brown rice with sauteed onion & faux "chicken"
- Leftover sushi rice w/ filling veggies
- Leftover cooked pinto beans
- Smidgeon of leftover vegan cheesy sauce
'Course there may not be much left for you to suggest since I already have some decent ideas for how to use up these foods:
- Leftover sushi for dinner
- Leftover brown rice with onion & "chicken"
- Veggie burgers made with brown rice & pinto beans with a "Swiss Steak" sauce - maybe with sauteed radishes & greens
- Bibim bap (using spicy greens, cucumber, dried shiitake mushrooms)
- Chile-potatoes with cheesy sauce
- Rice pudding made with mushy rice?
I'm probably going to need to throw a few things in the freezer if I can find space as we won't get to some of the leftovers fast enough.
Any ideas for what to do with the green tomatoes? I don't do them fried and don't need any more green tomato relish right now. Got lots of starchy meals planned so nothing jumps out for the squash.
Update: The brown rice is really quite disgusting in texture. I might try using it to make Heather's rice milk. I wonder if that can be frozen...

Why not bake the tomatoes? Nice crunchy snack.
Or alternatively a relish?
I assume your green tomato relish is more "pickle" than hot. One year we didn't have any tomatillos though we did have hot peppers. Combine the green tomatoes with the roasted green chilis and maybe some dried chili on hand for a salsa verder? Our big Bernadrin (Canadian version of Ball) preserving book had a recipe for salsa verde using green tomatoes. Those onions sound like a nice addition for it too!
I've baked up winter squash before and used it in stir-fry, or you can also make some yummy soup...
Here's an awesome use for butternut squash:

It's gnocchi, so you'll need flour. Hmm, do you have flour on hand? Anyways, it's really yummy, you don't need to use the cream sauce.
I love your blog.
Beany - that sounds pretty good.
Annet - your idea sounds good, too. I love salsa verde and it doesn't look like we'll get any more tomatillos this year.
Heather - winter squash and stirfry just doesn't sound like a good combination to me. What was I going to do with it last week? Saute it with Lizano sauce, I think? 'Course there's a really good recipe in our CSA database for squash-filled pastries, too.
Krista - interesting idea but damn, that blogger needs to choose a different font/background combination! I had to highlight all the text in order to read it.
Krys - ah shucks, thanks!
Hey Chile !
I am catching up on your blog and I read about the counter surfing pups.
Did I ever tell you that when we first got Snoopy (who is Angel-like) she managed to steal an entire loaf of homemade bread off the counter. I was upset and moved the second loaf to the back. When Russell came home, he cut off a slice of the other loaf and left it too close to the edge and she ate it, too. TWO LOAVES IN ONE DAY! Since then we push loaves of bread way to the back. Once she was staying at my in-laws house and stole a loaf of fresh bread off their counter. That girl is a bread freak!
I'm glad you're working with Poley and not giving up on him. It's so hard with shelter dogs sometimes! Scooter is completely idiotic and possibly a little mentally challenged but every day I love him more.
PS I thought of a rice-pinto-squash bake with enchilada sauce, cheezy sauce and chiles. And something crunchy on top.
I have a recipe for green tomato and onion casserole. Let me know if you want the recipe.
How about some cucumber kim chee for the cuke? Yummmm....
Sweet Potato - what a bread pig! Angel definitely got up on the counter as the bag was pushed to the back. She's a bad girl. We wouldn't give up on Polie...
I got lazy and shoved the pinto beans and cheesey sauce in the freezer. The dogs are going to get to eat the mushy brown rice.
Maggie's Meadow - would the casserole work with just 2 green tomatoes? If so, send the recipe please!
And I just finished making kimchi with one cucumber. Great minds think alike...
I sent you the recipe.
With regard to the soft rice and the greens, how about a soup and use the rice in the soup? You won't notice the texture of the rice so much in the soup.
Thanks!
Naw, the dogs really enjoyed some of the rice this morning. I picked up some organic, local, free-range chicken eggs at the CSA yesterday. Two scrambled eggs plus the rice substituted for half their breakfast. This is something we're looking at for long-range dog feed with our own chickens so I wanted to see if they liked eggs. Oh yeah! Gobbled the rice right up, too.
Hubby's not thrilled with the spicier greens so I think I'll use them for Japanese Farmhouse Greens at lunch today.
Skoryy is an accomplished egg-tief ~ he knows exactly where the eggs get laid in the big shed. He leaves the poultry alone & they will peck around him in their shed. All the dogs love eggs, especially raw & they love rice, pasta, baked potatoes, porridge...
For the green tomatoes, make a pie. Someone once told me that when she was growing up on a farm, they made mock apple pie using green tomatoes.
